There’s nothing like the smoky, sweet flavor of BBQ baked beans to round out a backyard cookout, campfire dinner, or even a road trip meal. But let’s be honest—traditional baked beans take forever. That’s why this microwave version is one of my favorite go-to recipes when I want something fast, flavorful, and still comforting. Andy first introduced me to this shortcut using pork and beans, and now it’s a staple in our house.
These BBQ baked beans are quick, easy, and require just a handful of ingredients you probably already have in your pantry. They’re the perfect side dish to throw together in minutes when you don’t want to spend hours in the kitchen.
Ingredients
- 1 can of Pork and Beans
- 2–3 strips bacon
- 1 teaspoon onion flakes or 1 heaping tablespoon fresh chopped onion
- 2–3 tablespoons brown sugar
- 2 squirts ketchup
- 1 squirt mustard
- A dash of Worcestershire sauce
- Salt and pepper to taste
Instructions
- Brown the bacon in a skillet. If you’re using fresh onion, cook it with the bacon until softened.
- Pour the can of pork and beans into a microwave-safe bowl.
- Add the cooked bacon and onion, brown sugar, ketchup, mustard, Worcestershire sauce, and a pinch of salt and pepper. Stir well.
- Microwave on high for 6 minutes, stir, then microwave on 70% power for another 6 minutes.
- Serve hot alongside BBQ, burgers, or your favorite grilled dishes.
Variations
- Add maple syrup, honey, or molasses for extra sweetness.
- Stir in 1 teaspoon cocoa powder (it deepens the flavor, no chocolate taste).
- Add minced garlic for a savory punch.
- Cook everything on the stovetop in a covered pot if you prefer.
